Hello, there is no minimum...once you push any of the options and the maching start heating you can stop it at the moment you want...on the screen you’ll how heat it is and then you can decide if you want to stop it or letting it heat further.

What's the difference between the "auto-off" and "keep warm" function? Will it automatically hold a temperature for 60 minutes, or is that"keep warm?"

The auto off works after you hit the designated temperature. The keep warm will keep the designated temperature for 60 mins. The Brewista SmartPour has a lot more settings than the other variable kettles out there and that is why it's so much easier to use.
