Truly low carb with minimal bg elevation.
I ordered this product two separate times - about a week apart. The first delivery was as described. Six 8 oz packs in one box for under $7. The 2nd time around, the price went up to a bit over $7. I ordered 10. Instead of the 10 boxes of 6 packets each, I only received 10 individual packets. Mispricing from someone? Who should step up to honor what was advertised? Big booboo. The expiration date is also only just so-so. Late November of 2021.Aside from this huge misstep; this is a great product. The flavor is forward. Only a minimal rise in blood glucose from one serving of 2 ozs. I only cooked it 2 minutes and rinse in cold water. I actually gently rub the noodles together to rid more of the starches, and therefore lessen some of the gumminess that can develop. The black bean variety is best cooked for no more than 3 minutes. Check often as it cooks. I like it tossed with garlic and olive oil. Heavy sauces seems to just weght it down. Saute the slightly under al dente cooked noodles with veges is another way to enjoy the noodles. Again, this is not the pasta we are use to indulging in. It does, however, fill a void for those on low carb, keto and or a diabetic.I have tried many dried low carb pastas; 7 types so far, all raise my blood sugar a lot. Since "pastas" affects blood glucose on individuals differently, the only way to be sure is to test after ingestion.Fuzzy labeling of ingredients is widely used. Look into the ingredients and you will find that, for instance, the fiber ingredient listed is often really debatable.I would order this product through the Explore Cuisine web site. More variety, better pricing and a much longer expiration date.Very hard to rate this. A rating of 5 stars for flavor, 1 star for the all the missteps.Hope this review help.

Recipe change - terrible quality now
Unfortunately, the brand has completely cheaped out and changed the recipe for the chickpea fusilli. However, they’re still charging the same price. What used to be the gold standard of chickpea noodles is now completely inedible. It turns to mush when you cook it, and once you start eating, it sticks in your teeth.When I had ordered this after the recipe change, I had to double-take here - I truly thought I had been delivered a scam pack of noodles from one of the worst brands but packaged in Explore Cuisine boxes - nope. Same brand, just terrible noodles now :/I don’t know why they changed the recipe - their website claims it’s simply for the shorter cooking time, but the noodles already had a short cooking time. I’m unaware anyone demanded horrific quality in exchange for saving two minutes (truly).I just assume some higher-up thought it was better to tank the quality and cheap out to line their pockets. I’m unsure if they realized it’d result in a mass abandonment of these particular noodles. Maybe they wanted to phase these out and thought wasting product would be better than just pulling it? Who knows, but the disappointment is real - this was my go-to brand and go-to fusilli.That said, I still buy the red lentil penne - at least that one is still good.

This is for one box! But its DELICIOUS.
First off, I have to say the seller is very cordial. They are aware now that this listing is for one box and are in the process of addressing it.I love this brand though. I do low carb for health and I love how satisfying these pastas are. They're absolutely scrumptious and hold up really well.Just made scampi with this last night and was thrilled with how good it was. It didn't get crumbly and mushy when I finished it in the sauce. Even my carnivore boyfriend approved! It's nice getting a little extra protein from these as well!Finding these online has been great because they're usually sold out around me.

A Decent Carb Substitute!
The texture and sauce-holding abilities are pretty great for this pasta sub. There's a definite vegetable aftertaste (a very mild broccoli-ish flavor), but nothing I couldn't deal with once there was some sauce. All in all, I'd buy it again for sure. Excited to try their black bean pasta next!

Great protein, no funky texture
I recently shifted to mostly vegetarian and needed more options for protein. These are great! I do not like beans and have tried other bean type pastas and mostly dont care for the texture. But these do not have an off putting flavor or texture. Much better than other chickpea pasta, such as Banza. I will happily replace all pasta with these. They are somewhat expensive considering pasta is cheap, but worth it for the protein. Love it!

They've ruined it
I've been buying Explore Cuisine lentil and chickpea pastas for years now, but they've changed the recipe. I like my pasta cooked a little more than al dente, but due to more recent negative reviews, I cooked it a little less than the recommended time. It quickly turned into a solid pile of mush. It was inedible. I don't have any older boxes to see if I could spot any changes to the recipe, but the chickpea noodles themselves are smaller than they were previously. Wish I had heeded the warnings. Now I have 5 boxes that will probably go in the compost pile. They've ruined what was a very good pasta. Too bad. I guess I won't be buying Explore Cuisine again.

Have a blood sugar problem and miss pasta? This is your ticket!
Needless to say, my five-star review says I'm thrilled that after years of having to avoid pasta, I can enjoy it again. This particular flavor mimics spinach pasta. It does taste different than regular pasta based on wheat, but quite frankly, I like this even better. It's heartier, and guess what? It's loaded with protein and fiber. Never thought I'd live to see the day when I could eat pasta again. I have a jar of pesto just waiting to be put on this stuff. Feta, olive oil, basil and cherry tomatoes are excellent on it.

reviews regarding recipe change are confusing to me...still good
if you follow the instructions, the chickpea fusilli cooks just finei love that there is no added ingredients and quality product!will buy again :)
