A very tasty dark chocolate
I use these for chocolate mousse and for chocolate ice cream. Guittard is an excellent chocolate for both purposes, high quality and tasty! A bit expensive, but to me worth the premium.

These are mini chips--not regular sized chocolate chips
Although the package says "baking chips," they are not the same size as "baking chips" of other vendors (such as Ghirardelli). Flavor is okay; I've had better, I've had worse. These are not "extra dark" in flavor. The texture is nice, and they are creamy when melted. But the taste is more semi-sweet than dark chocolate. I also don't care for the vanilla notes. Although I love vanilla, when I want chocolate flavor I want a pure chocolate flavor. I much prefer the taste of Scharffen Berger’s Dark Chocolate for baking--or even just plain eating right out of the bag.

Love these in vegan waffles
I add a bag of these Guittard chips to my mix when making vegan waffles. I use a Bob's Red Mill waffle/pancake mix, which makes 9 large round Belgian waffles this way: pour the entire bag into a large bowl. Add a quart of nondairy milk (I like Edensoy Unsweetened Eden Organic Soymilk for the high protein content--12g per serving). Make 4 flax eggs (put 3/4 cup of warm water in a 2-cup glass measuring cup; add 1/4 cup of ground flaxseed; whisk for 30 seconds and let sit for 5 minutes) and add to bowl. (Or for more decadent waffles, add 3/4 cup of Just Egg "Eggs From Plants" liquid instead of the flax eggs.) Stir the mixture. I spread out two cups of pecan pieces on a toaster tray and toast until fragrant, and add the toasted pecans to the mix once they've cooled a bit. Then add these chocolate chips. Stir until combined, and waffle away! They freeze well and toast well in the toaster oven.
