Q: Is the lip removable?

Not by design. I suppose it would be removable if you really wanted it to be and had the tools to do it, but you won't be removing it and then putting it back on without significant effort.

Q: Can you use this to achieve the recommended 30% angle for watercolor?

No, the shallowest it will go other than flat horizontal is about 42 degrees. It only has 2 slopes 42 degrees and 54 degrees. I bought mine for watercolor also but there is no way you can get ut at 30 degrees.

Q: Can this be used for puzzles?

I have been thinking about getting one to use as a more affordable option to the more expensive puzzle tables. I would simply use a larger board covered in felt as my "canvas" and elevate it using the easel. The whole thing can be moved when not being actively used.
