Q: Is this really simple to fold back up

Not at all. Used it once and have not been able to fold it back after 3 plus attempts. Pretty upset it was such a waste

Of course, it will be spacious for 2 children.

Q: Is this tent UV resistant?

I believe so as it should state on description. It's similar to an umbrella in resistance not proof. It does keeps things noticeably cooler for the kids.
