am i able to use this to record straight down without getting the tripod in the shot?

I have only used the tripod once to photograph something straight ahead. However, I do not think the camera holder can be angled down sufficiently to photograph directly below.

Does it fit with mous case on iphone 14 max pro

I have an iphone 14 pro max and it did fit with a case on as well

Can the rotation be changed from portrait tp landscape without unscrewing the holder and repositioning?

You don’t have to completely unscrew, you just loosen it

Does this work with an iphone 11?

I have an 11 Max Pro and can confirm it works on iPhone 11 as-well as 11 Max Pro. It has a retractable extender so will work on most phones I imagine.
