Can you leave the keg on it? Or do you have to take it off and put it back on for the weight?

It can be done but it is not recommended. First, LCD display would have to be mounted outside the cooler and cord is fairly short. Then, you would have to do a small programming change to prevent LCD from timing out. This would keep the display on all the time. If this is important, we could walk you through the procedure after the purchase.

Is this scale legal for trade?

It was designed as a postal scale so I would think it is legal for trade. Very accurate and perfect for weighing kegs.

Can this scale stay in the cooler all the time?

The scale work in the cooler but it is not recommended to keep it in there since over time ANY scale can get moisture buildup on the circuit board and cause problems down the road.

Is this scale water proof?

the scale is water-resistant so it can get water or beer on it in small quantities. It is not waterproof so it would stop working if submerged in liquid. Excessive moisture will void warranty on any scale you purchase.
